I didn’t even know that broccoli soup was a thing until 2 months ago. I went to the Drakensburg on a weekend away and for lunch on Saturday we were served broccoli soup for starters. Oh em gee! I was blown away, it was so yummy and I had to try make it at home. It makes for such an easy weekday supper, serve it with some bread and cheese and you’re good to go.
So I made my own version of the soup, after searching the internet for a few idea. I love it so much, I make it at least twice a month. You can see from the recipe that I don’t have a lot of quantities next to the ingredients; it really is a play it by ear type of recipe. It’s not that hard to get it wrong – I hope! With the blending,you can make it very smooth like a puree, I personally like my soups with chewable bits in them, so I don’t blend it too much.
