I love pancakes, we eat them for breakfast on the weekend all the time. After a lot of trial and error I have found the perfect pancake recipe that I have been using for years and I know it off the top of my head. The best thing is that it works every single time and it’s seriously so easy to remember and you can make it with ingredients that you already have in your kitchen, there’s no need to go buy half a pint of milk from a Mongolian goat that was born in 2017.
- 1cup flour, sifted
- 1 teaspoon baking powder
- 1 cup sugar*
- 1 egg
- pinch of salt
- 1 teaspoon vanilla extract
- 1 cup of milk
*note: I think 1 cup of sugar is too much, so I 1/2 a cup or even less.
- Mix the dry ingredients
- Mix the wet ingredients
- Add wet ingredients to dry ingredients and mix with a whisk
- Let the mixture sit for a minimum of 30 minutes (this is important to make the pancakes fluffy)
- Cook in a large pan using butter or an oil of your choice
- Serve warm

You can jazz up your pancakes by adding blueberries or choc chips or cinnamon to the batter. To serve, you can have bacon (my personal favourite!), syrup, honey, whipped cream or strawberries.
