Baking is my current jam! I love having homemade cakes or biscuits available whenever I need to satisfy a sweet craving. After looking high and low for the perfect chocolate cake I finally found one from the LOVE2COOK MALAYSIA website which I adapted slightly and added my own twists to it. I also love it because it is so easy to make and it delivers perfect results every single time I make it (I make it quite often). It’s a family favourite for sure!
Ingredients
- 1 cup flour
- 1/3 cup cocoa powder
- 1 egg
- 1/2 cup milk
- 1/2 cup boiling water
- 1 cup sugar
- 1 tsp baking soda
- 1/2 cup oil
- 1 tsp vanilla extract
- 2 tbsp coffee powder
Method
- Mix flour and baking soda using a whisk
- Beat sugar and oil,add the egg and beat well
- Add milk and cocoa and mix everything well
- Add coffee and vanilla extract to boiling water and add to the wet ingredients mixture
- Add the dry ingredients to the wet ingredients and mix
- Pour mixture into a baking dish /cupcake moulds
- Bake at 150 C for 30-35 minutes
- Cool on a wire rack
Extras
For that extra chocolate-y taste and a surprise I always add a few milk chocolate drops to each of the cupcakes just before baking. I dust then flour to prevent them from sinking to the cupcakes.
Icing
Truth be told these cupcakes don’t need icing but I was a bit OTT and added something new which is a cream cheese chocolate icing. This was the first time I made this icing and it complemented the cupcakes so well. Here’s the recipe for that:
- 250g plain cream cheese
- 1 cup icing sugar
- 50g butter
- 1/2 tsp vanilla extract
- 1/4 cup cocoa
Add butter and cream cheese to a mixing bowl and blend until smooth. Sieve icing sugar into the bowl, add vanilla extract and blend till smooth.
Tips for the icing: Make sure the cream cheese is at room temperature and add the icing sugar in stages while stating until the mixture reaches your desired sweetness level. Depending on how sweet your tooth is you might not need to use a whole cup.
